SAN CHOY BOW
INGREDIENTS:
- 750g lamb mince
- 1 ½cups grated carrot
- 1 small onions finely sliced
- 2 tbs minced garlic
- 1tsp ground ginger
- 3tbsp ketjap manis sauce
- 1 rec capsicum diced
- 2 cups bean shoots
- 1iceberg lettuce to serve
- 1cup vermicelli (cut small and prepared as per package instructions)
- 2 tsp olive oil
METHOD:
- Heat olive oil in wok over high heat, then add mince and cook until browned.
- Once mince is browned, add garlic, ginger, carrot, onion, capsicum and stir fry for a few minutes until cooked through.
- Add ketjap manis and bean shoots and stir through.
- Remove from heat and add vermicelli.
- Serve in lettuce cups.
