Recipe – San Choy Bow

SAN CHOY BOW

INGREDIENTS:

  • 750g lamb mince
  • 1 ½cups grated carrot
  • 1 small onions finely sliced
  • 2 tbs minced garlic
  • 1tsp ground ginger
  • 3tbsp ketjap manis sauce
  • 1 rec capsicum diced
  • 2 cups bean shoots
  • 1iceberg lettuce to serve
  • 1cup vermicelli (cut small and prepared as per package instructions)
  • 2 tsp olive oil

 

METHOD:

  1. Heat olive oil in wok over high heat, then add mince and cook until browned.
  2. Once mince is browned, add garlic, ginger, carrot, onion, capsicum and stir fry for a few minutes until cooked through.
  3. Add ketjap manis and bean shoots and stir through.
  4. Remove from heat and add vermicelli.
  5. Serve in lettuce cups.
